Wildcrafted.* Origin: India. The dried leaves of the American Wintergreen or checkerberry shrub, clasically used as a major flavor compenent of early rootbeer formulas. Wintergreen has an intense minty aroma familiar to most of us in wintergreen candies, caused by a compound called methyl salicylate, an aspirin-like compound historically used to treat rheumatism and inflamed joints topically or internally.
Try adding wintergreen to the end of your boil to capture fantastic minty aromas without pulling out too much astringency, possibly in a no-hops porter recipe alongside licorice root, sarsaparilla and star anise.
