Imperial's first released sour bug blend. A lambic-style blend containing a Belgian Saccharomyces, two Brettanomyces cultures, and a Lactobacillus strain. Can be used as your primary fermenting yeasts to really boost up acidity and funk. Sour yeast blends can take 3-6 months (or longer) to properly develop flavors.
This blend will change periodically to include different Sacch, Brett and/or Lacto strains.
