A hoppy, medium-bodied beer made with rice syrup and raw buckwheat that you malt, roast and mash yourself! We developed this recipe for our customers who are avoiding gluten but still want to enjoy the taste and process of making your own beer.
For this recipe, you will need to perform the extra step of malting your buckwheat before you brew (organic malted buckwheat is not available commercially). Malting is the process that all barley and wheat malts go through at the maltster, and is a crucial step in the making of any beer. The process involves soaking the grains in water, allowing them to germinate- which releases fermentable sugars and enzymes within the grain- and roasting the sprouted grains. Don't worry - it's easy! We've included detailed instructions for this step. Please note that this process takes 4-5 days.

Recommended yeast for this kit: Safale-05, Safale-04 or Safbrew T-58 dry yeasts (Liquid yeasts are prepared with dry malt extract and are therefore not gluten free)
