Our Colombia Excelso Popayon beans come from organic plantations grown high in the Colombian region of Cauca. Colombian coffee has long been held as the baseline of coffee in America, a clean, sweet, vibrant coffee that is classically well-rounded.
We recommend taking this coffee to a medium roast to preserve the understated fruity aromatics, creating a clean and smooth bodied cup with some bright cherry acidity. Roasting to a darker level will round down the acidity and create some smooth, creamy chocolate mousse characteristics to come to the forefront.
