***NOTICE:
Hop Purchase Limitations As of 3/1/2009*** Because
organic hops are in short supply worldwide,
and some varieties are difficult
to obtain, we have order limits for hops. Certain
hop varieties have quantity limits. Additionally,
if you place an order for more
than
16 oz.
of
hops
and have
not made a purchase from us prior to September
1 2007, your order will be refused unless it
contains enough organic brewing ingredients
to brew at least one 5 gallon batch of organic
beer or you can verify that you purchased organic
brewing malt elsewhere. Regular customers and
customers who purchase base brewing ingredients
from us can buy as many hops as they need but
we reserve the right to limit order quantities
at any time if an order exceeds amounts considered
normal for homebrewing purposes. Closeout hops
are exempt from our policy and any order
for closeout hops will be accepted but all
sales of closeout hops are final.
We
are dedicated to promoting all organic beer,
brewed only with organically grown malt and hops.
Currently there are not enough organic hops available
to brew enough 100% organic beer to meet the
current demand. As a result, we only sell our
organic hops in quantity to brewers who can verify
they are using the hops to brew organic beer.
Breweries
and homebrew shops who buy hops from us at wholesale
should enquire by telephone or e-mail, as we
have inventory that we allocate to wholesale
customers and the order limits are very different.
Over
the years, the availabilty of organically
grown hops has grown considerably. Our first
catalog
in 1997 offered 4 types of organic hops.
Now there are over a dozen varieties, available
in both pellet and whole flower form. Supplies
continue to be limited as the global demand
for organic hops is higher than the available
supply. It is not unusual for us to sell
out
of the most popular varieties before the
next crop arrives. All of the hops that we
sell
are fully certified organic under the USDA
National Organic Program. Organic certificates
are available with your purchase upon request.
All alpha acids given are average amounts
for each crop. We
are dedicated to offering every certified organic
hop variety commercially available
to our customers.
We offer excellent prices considering wholesale
costs of 2 to 3 times that of conventional hops
costs because we buy in large quantities and
we take a lower mark-up than typical
homebrew retailers.
We do sell our hops wholesale to licensed breweries
that brew organic beer and homebrew supply shops
that wish to offer certified organic brewing
supplies to their
customers.

Our
hops are vacuum sealed in oxygen barrier packaging
for the highest possible freshness
and frozen until
shipped. Our whole hops are always packaged
in foil bags to prevent light damage
in addition
to superior oxygen barrier protection. Whole
hops must be strained from the wort after the
boil. Using whole hops helps
to
filter out proteins from the mash after the
boil, and can also help settle malt
proteins during
the boil.
Pelletized hops are simply whole hops that
have been ground into a powder and compressed
into
pellet form. They are easy to brew with, especially
for
dry hopping without having to use a hop bag.
Pellet hops stay fresh longer than whole flower
hops and
are easier to measure and store. |

American
Summit
Hop

We
are excited to bring you the first of what we hope
are many offerings of certified organic hops grown
right here in North America. Grown in the Yakima
Valley of the Pacific Northwest by a family farm
with generations of experience growing hops, and
one of the first to grow certified organic hops
on a large scale here in the United Staes. These
are strong bittering hops with a
strong
citrus
or grapefruit aroma. We are impressed with the
strong pungent aroma with herbal notes reminiscent
of
a good Australian Pride of Ringwood hop. With the
strong citrus character, Summit is a good choice
for an American style IPA. Summit is the first
dwarf hop to be bred for production in
the United States. They are grown on a low trellis
requiring hand picking so the hop cones are hand
selected and less damaged than machine harvested
hops. Recommended substitute for Galena, Simcoe,
Cascade, or Pride of
Ringwood. |
American
Palisades
Hop

Palisade
hops are grown in the Yakima Valley of the Pacific
Northwest
by a family farm
with generations of hop growing experience. The
Palisades variety was bred from Swiss Tettnanger
hops,
and have a character similar to Willamette
or Fuggles. They exhibit a refined and subtle
flavor with an earthy herbal aroma that could
also be described as grassy. A slight spicy character
with hints
of citrus or
apricot
makes
some describe this hop as pretty. As mellow rather
than overpowering hop the Palisades are a great
hop for beers that strike a good balance between
malt and hops and have a smooth drinkable character. Recommended
substitute for Tettnanger, Willamette, Fuggle,
Styrian Golding.

Belgium
Saaz
Hop

Saaz
hops have long been revered as the very mild spicy,
earthy aroma hop associated with European Lagers.
This is the hop you will want for your finest European
style Pilsners, and it will shine in wheat beers
and Belgian style ales. The masterful Belgium growers
have done an outstanding job cultivating
this notoriously
difficult
to grow
hop. The fact that they managed to grow it organically
is proof positive that the skills exist in this
world to grow any hop organically if the task is
approached with the right amount of knowledge and
dedication. An excellent substitute for Czech Saaz,
US Sterling, or Polish Lublin. |
Fuggles
Hop

Fuggles
have long been used in the finest English style
ales for aroma and flavor, and will infuse a mild
hoppy flavor and pleasant aroma in the best pale
ales, bitters, and browns. The light bitterness
and clean
hop
flavor and aroma make a good combination with high
alpha hops such as Target or Pacific Gem. Fuggles
is a great choice for hoppy American microbrew
style ales, and works surprisingly well in Lambic.

One
of the finest hops in the world, Kent Goldings
is the traditional old English hop developed
in the late 1700's. Excellent for English style
ales and Porters, this is a mild hop with a pleasant
flowery aroma and a refined flavor. Also suitable
for many Belgian, French, and Scottish ales.
Possible substitutions: US Goldings, First Gold,
UK progress. Organically grown in Belgium from
Kent Goldings rootstock.

Recognized
as a dual purpose hop because it has a respectable
alpha acid level combined with a good hop aroma.
Originally bred from Northern Brewer rootstock
in the late sixties, this hop has become a staple
for many English breweries, and is at its best
in styles such as ESB, porter, stout, barley
wine, and brown ale. The aroma is strong with
refined spicy notes. A good substitute for Northern
Brewer or Perle hops.

First Gold

First
Gold is one of England's new dwarf
hop varieties, a cross-pollination of Whitbread
Golding and a dwarf hop plant. With a higher alpha
acid than its cousins this hop is versatile for
bittering but has the good clean aroma and flavor
desirable in many hoppy ales. Imparts a pleasant
citrus/apricot nose that is outstanding in ESB's,
IPA's, or fruit beers. Organically grown in Great
Britain. A good substitute for Kent Golding or
Crystal. |
German
Opal
Hop

This
is a new German hop from the German research center
Hüll that exhibits excellent aroma characteristics
combined with a respectable alpha acid level. Opal
is a European jewel which has a sweet spice, slightly
peppery aroma and flavor combined with a light
clean citrus fruit aroma. We think this hop will
do well in German wheat beers, summer ales, Helles,
light European lagers, light ales, Saisons, and
Belgian wit. A good substitute for East Kent Goldings,
Styrian Goldings, or Tettnanger. |

This
is a relatively unknown but up and coming new
breed of hop that is starting to replace the
Hallertaur Mittlefrueh variety which has become
more and more susceptable to diasease and pests.
Shares many of the Hallertaur Mittlefrueh characteristics
and with a low alpha acid content is very well
suited as an aroma hop for the finest European
style lagers. The Saphir is a true jewel in the
noble hop family and has a refined aroma and
a mild flavor. This hop is distinguished by a
sweet and clean citrus aroma that has a hint
of tangerine. Try this in your finest German
lagers, Pilsners, Belgian White, or even an English
mild ale. |
German
Hallertau Hersbrucker

This
is a traditional European hop widely used in
many beer styles including Lager, Bock, Weizen,
Belgian Ales, Kolsch, and Helles. A hop suitable
for flavor and aroma with an exceptionally pleasant
spicy aroma and a refined finish. Also a good
hop to
use
for American lagers and light ales. A good substitute
for Mt Hood or French Strisselspalt. |

popular dual purpose hop used as a bittering
hop that adds a clean, slightly minty flavor,

from Pale ale and Porter to Pilsner, Alt, and

Hallertaur Tradition

hop was bred to become a stronger, more disease
resistant version of Hallertaur Mittelfruh. Best
used as an aroma or flavor hop in European style
ales and lagers
such as Pilsner, Alt, and wheat beers, but its
classic smooth flavor and refined noble aroma
make this a versatile hop for a wide range of
beer styles. A good substitute for Liberty or
German Hallertau. |

Spalt Select

Exceptionally
fresh and aromatic, German Select are one of the
best organic hops we have found. Bred from Mittlefrueh
and Spalt hops in the early 90's the aroma of Select
hops is reminiscent of a fine Tettnanger or Hersbrucker
noble hop. A hop suitable for bittering, flavor,
and aroma, it is excellent in European ales and
lagers, with a pleasant spicy flavor and strong
aroma. A good substitute for Tettnanger, US Saaz,
Hersbrucker. |

to the German Hallertau Mittelfruh variety with
a pleasant floral aroma suitable for flavor and

taste even in older beers. This hop is a good
choice for German style lagers and European and
American ales. We like this hop as a substitute
for Hallertaur or Tettnanger hops, and its clean
aroma works well for aroma or dry hopping American
style hoppy pale ales and IPAs.

pests such as downy mildew. One of the methods
employed by New Zealand organic hop farmers to
reduce pest damage is to send sheep into the
hop row to defoliate the lower branches. This
also provides a source of fertilizer for the
plants. Pacific Gem is a very high alpha hop
with a pleasant citrus aroma good for bitters
and dark beers. Some brewers have reported that
Pacific Gem provides a subtle "blackberry" flavor/taste,
which is a popular characteristic for English
bitters and stouts. With its good clean bittering
character, Pacific Gem is a good substitute for
Magnum, Millenium, Nugget, or Columbus hops.

New Zealand, this new hybrid of Saaz is a welcome

New Zealand Saaz is bred from Saaz rootstock
hybridized with organic New Zealand stock. Quantities

and a strong hoppy aroma. The aroma is an astonishingly
strong fruity and sweet aroma perfect for hoppy ales.
Admiral gives a citrusy sweet flavor with hints of
orange to most brews which is well suited to hoppy
beers especially IPA. This is the hop to use for
beers wanting a strong hop nose and a well rounded
bitterness. Supplies are very limited this year and
orders are limited to 6 oz. of this hop per customer.
Very good in recipes calling for Amarillo, Cascade,
