Imparts a mild, sweet flavor (not like licorice candy) and a dark color, and can dramatically improve head retention. Licorice has historically been an important brewing ingredient and is still used by some commercial breweries today. Use 1/4 to 1/2 oz. in the boil. The root is effective as an expectorant, to soothe sore throat, and has antibacterial properties. Licorice also aids in restoring adrenal glands and is an effective remedy for stress and excessive caffeine intake.
