El Salvador San Mauricio Pipil Green Coffee Beans, 5 Lb. Bag

Produced by the members of APECAFE in the San Mauricio region of El Salvador. One of our favorites, this is a rare coffee from the highlands in eastern El Salvador, the source of some world class coffees in the past few years. The cooperative of small farmers who grow this coffee suffered greatly from the civil war in El Salvador. They had to pay war taxes, and their coffee processing facilities were burned in the guerrilla attack in November,1989, thus leaving them unable to collect and process coffee during that period. During the postwar times many co-op members were kidnapped and extorted to pay ransoms to criminals who were mostly ex-militants. Most of these small producers are Mayan ancestors and they dedicated their productions in memory of their ancestors by continuing to grow and harvest their coffee in harmony and religious respect for the environment. Times continue to be difficult for these farmers due to the low prices of coffee, which is why the Fair Trade prices are so important. The coffee is organically grown under a rich canopy of shade trees, making the farms a sanctuary to many migratory birds and other endangered local species. The coffee has a rich flavor and fragrant aroma, with a pleasant earthyness and a hint of cocoa. We recommend a medium to full city roast.
