Winners*:
HOMEBREW
CATEGORY- Fall Quarter 2006: Subcategory: "Why
Brew Organic"
"My wife and
I are new to the homebrew adventure. We have discussed brewing our own beer for
years. Recently we decided to stop talking and start brewing. In the quest to
create our great beer, we found that the ingredients are of utmost importance.
In our search for hops we were lucky enough to find Seven Bridges Cooperative.
Seven Bridge's approach to their products is simply wonderful, organic products
and fair pay for workers. My wife and I believe that organic food promotes a
healthy life, a healthy world and a healthy marriage. It is important to recognize
the impact we have on the environment and we firmly believe in supporting businesses
that share our view. Our great beer deserves nothing less than high quality organic
ingredients. Thank you for all you do. Have a good brew!" -Victor
from Oak Park, IL (prize is Organic Beer Kit or organic ingredients
for a 5 gallon batch)
HOMEBREW
CATEGORY- Fall Quarter 2006: Subcategory: "Why
Brew Organic"
"Though
there really is no reason NOT to brew organic,
here is a good one: macro breweries have
roundly rejected and somehow slivered out
of governmental attempts to mandate the companies
to list the ingredients of their product.
Their claim is that this would cost them
too much money... Budweiser alone has over
75 chemicals in it; clarifying agents, coloring
agents, chemicals for head retention, just
to name a few... I'm not quite sure how I
feel about putting that in my body..
A recent study on Miller Lite by the Center for Science in the Public Interest,
a consumer group based in Washington, D.C. showed that the beer was comprised
of the following: propylene glycol alginate, water, barley malt, corn syrup,
chemically modified hop extracts, yeast, amyloglucosidase, carbon dioxide, papain
enzyme, liquid sugar, potassium metabisulfite, and Emka-malt, whatever that is.
Pretty gross, huh?" -Ryan from San Francisco, CA (prize
is Organic Beer Kit or organic ingredients for a 5 gallon batch)
COFFEE
CATEGORY- Fall Quarter 2006: Subcategory: "Why
Roast Organic"
"The
coffee I roast tastes so much better knowing
I'm helping someone I don't even know on the
other side of the planet. Thank you for what
you do!!!"-
Steve from Anderson, IN (Prize is 5 pounds
organic Fair Trade green
coffee)
COFFEE
CATEGORY- Fall Quarter 2006: Subcategory: "Brewing
and Roasting Tips"
"My
husband and I have only recently decided to
roast our own coffee. For the past two years
we have been homebrewing and making our own "fruit" wines,
but it never entered our heads to roast our
own coffee. Part of our reluctance to take
on another do-it-yourself beverage was the
necessity of more expensive equipment which
can get very costly on a college-student budget.
A friend of ours has hit upon a very effective and cheap coffee roaster. After
dabbling with stove-top popcorn poppers (similar to a stove-top roaster) he got
the idea to try an air-pop popcorn machine. The results are superb. Because the
coffee is in costant motion it gets a very even roasting without the charring
he experienced with the stove-top model. It also requires much less fuss and
cleaning. He uses an upright, stand-alone model which is designed to eject the
popcorn down a shute and into a bowl as it pops. You can acheive a particular
roast (light, medium, dark, espresso, etc.) by tilting the machine backwards
until the desired roast is acheived. The only real drawbacks to this method is
that you are limitted in the amount of coffee you can roast at a time and the
popcorn popper ejects the coffee chaff but this can be caught with any household
strainer and composted. On the plus side, it only takes about 5-10 minutes to
roast the beans (depending on how dark you want the roast), doesn't heat up the
house by keeping a stovetop on for prolonged periods, and the popcorn popper
costs $16. We've got our popcorn popper and are really excited to try this out
on our own."- Angie from Berea, KY (Prize is 5 pounds organic Fair Trade
green coffee) |
