All Grain

Ingredients for 5 gals:
3 lbs. Organic Great Western 2 Row Malt
3 lbs. Organic Great Western Munich Malt
3 lbs. Organic Gambrinus Pilsner Malt
.5 lbs Organic Briess Carapils Malt
.5 lbs Organic Briess Caramel 20 Malt
.5 lbs Organic Briess Caramel 60 Malt
Mash for 60 min
.75 oz New Zealand Hallertaur Hop Pellets @ 60 min
.5 oz German Hallertaur Tradition Hop Pellets @ 20 min
.25 oz German Hallertaur Mittelfrueh Hop Pellets @ 0 min
.5 oz German Hallertaur Tradition Hop Pellets @ 0 min
1 tsp. Irish Moss @ 20 min
Yeast: 1 vial White Labs California Ale #001

Original Gravity (O.G.): 1.056
Final Gravity (F.G.): 1.008
Average alcohol content (% by volume): 6.3%

Judge’s Comment:
“ some sweetness in the start, followed by fairly high bitterness. Finishes dry and slightly bitter”

B*tch Slapped by John Radcliff
Organic American Brown Ale
Mash Extract

Ingredients for 5 gals:
1 lb. Organic Gambrinus pale ale malt
1 lb. Organic Munich Malt
Mash for 50 min
Boil for 60 min
4.4 lbs. Organic Pale Liquid Malt Extract
2 lbs. Organic Dry Malt Extract
.75 lbs. Organic Caramel Malt
.25 lbs. Organic Chocolate Malt
.5 oz. Organic American Summit Pellet Hops @ 60 min
1 oz Organic Kent Goldings Whole Hops @ 20 min
.5 oz. Organic German Tettnanger pellet hops @ 20 min
.5 tsp. Irish Moss @ 20 min.
Yeast : White Labs California Ale #001

Original Gravity (O.G.): 1.060
Final Gravity (F.G.): 1.020
Average alcohol content (% by volume): 5.2%

Judge’s Comment:
“ chocolate, nutty, earthy hops, soft bitterness”

1st Place Belgian & French Ale Category:

More Than a Party Part Gyle Wit by Mike Persinger and Mike Smith
Organic Witbier
All Grain Parti-Gyle
First runnings (3 gal) were barleywine, the rest was further split into 2 batches to get 3 gallons of wit and 3 gallons of rye beer.
Ingredients for 9 gals:
15 lbs. Organic 2 Row Pale Malt
9 lbs. Organic Flaked Wheat
6lb Organic Light Malt Extract
1.5 lbs. Organic Flaked Rye
1 lb. Organic Flaked oats
1 lb. Organic Cane Sugar
Mash for 90 minutes
Boil 1, Barleywine 3 gallons, 90 min
1 oz. Organic Belgian Admiral Hop Pellets
13 oz homegrown Cluster wet hops
5 oz homegrown Cluster wet hops
2.5 oz homegrown Chinook wet hops
.25 oz Organic Belgian Admiral Pellet hops
Boil 2, 6 gallons, 90 min
1.25 oz. Organic Hallertaur Tradition pellet Hops
.3 oz Belgian Admiral pellet hops
At 50 min, boil 2 split in half, and spices added to 3 gal for the wit:
.5 oz Organic dried orange peel
.325 Organic coriander
.1 oz organic chamomile
Yeast for wit: Wyeast Belgian Wit 3944

Original Gravity (O.G.): 1.053
Final Gravity (F.G.): 1.013
Average alcohol content (% by volume): 5.2%

Judge’s Comments for Witbier:
“ Bright wheat aromatics, a touch lemony and spice notes in the background. Nice zesty citrus esters.

1st Place Belgian Strong Ale Category:

Farmhouse Blond Ale by Richard Lawrence
Organic Belgian Blonde Ale
All Grain

Ingredients for 5 gals:
8 lbs. Organic Gambrinus Pilsner Malt
4 lbs. Organic Great Western 2 Row Malt
1 lb. Organic Briess Carapils Malt
.67 lbs Organic Briess Caramel 20 Malt
Mash for 75 min
1 oz German Hallertaur Mittelfrueh Hop Pellets @ 60 min
1 oz New Zealand Hallertaur Hop Pellets @ 15 min
1 tsp. Irish Moss @ 20 min
Yeast: 1 vial White Labs Belgian Ale #550Original Gravity (O.G.): 1.060
Final Gravity (F.G.): 1.006
Average alcohol content (% by volume): 7.1%
