This
organic coffee is grown in the state of La Paz,
Bolivia (about 12 hours from the city of La Paz)
in several small communities and villages. These
coffee farmers are known as "Colonials".
During the 1950's, wealthy and large land owners
took over this region. Properties were confiscated
from the native people, who were forced to work
for the new owners. In 1991, through a governmental
land reform, the larger landowners were made to
relinquish their holdings of these small farms
and return the rightful ownership back to the families
whom originally owned them. They now have freedom
to work to improve their income, their own lives,
and the health of their community. The organic
coffee trees are older cultivars: Typica and Bourbon.
The coffee is slightly spicy, medium to full bodied,
with a mild acidity and has a good balance. A well
rounded coffee perfect as a single origin brew.
Excellent for medium to French roasts.

Bolivia
is a country of very small farmers who have been
left out of the gourmet coffee market until just
a few years ago. Recent investments have made it
possible for some of these farmers to develop quality
growing and processing techniques, and the result
is some excellent coffees now coming from this region.
As with all of our coffees, this is certified Fair
Trade and organic, to ensure the farmers will have
every reason to continue producing this fine coffee
for years to come. Grown at 4600- 6000 feet, the
Cenaproc won 1st place in a recent cupping competition
of Bolivian coffees. The Cenaproc is sweet with clean,
delicate fruity flavors, a mild chocolate finish,
and balanced with a nice caramel acidity. To keep
the more delicate flavors intact we recommend a medium
to full city roast, but it will hold up to a darker
roast as well.

are pleased to offer this wonderful Brazilian coffee
from Poco Fundo Cooperative near Rio De Janeiro.
This is a rich, vibrant coffee anchored with a deep

bodied earthy flavor and lots of fruity high notes.
A bit
wild in
character, reminiscent of an Ethiopia Harrar or Sidamo.
If you like the Ethiopia Coffees, definitely give
this one a try! Poco Fundo is a cooperative of small
scale
farmers (founded
in 1991) located in the state of Minas Gerais in
southeastern Brazil. By forming a coop the farmers
have been able
to improve the quality of the coffee through education
and training, as well as improving their own quality
of life by consolidating resources and improved incomes.
The coffee trees are of the Caturra and Mundo novo
varieties. All the coffee is hand picked and dry
processed. Roast this one to Full City or French
to get a rich
chocolate character which could be lost with darker
roasts. |

We
have made a pleasant discovery in this new coffee
from the Cauca region of Colombia. A very rich and
flavorful
coffee with a deep sweetness reminiscent of dried
figs or plums with a smooth chocolate aroma and deep
spicy
sweetness. Balancing these deep flavors with
a medium acidity adds up to a nice robustly flavored
coffee that is at its best in a medium to a Full
City roast.The
ACOC cooperative (Asociacion de Caficultores Organicos
de Colombia) is deeply dedicated to organic agriculture,
and the farmers members of this cooperative use earthworm
composting to nurture the coffee trees with the nutrient
rich soil produced from the coffee pulp and other
organic
wastes left over from coffee processing. This has
made a noticeable improvement in the health of
the coffee trees and has likely been a contributing
factor in producing an outstanding tasting coffee. Fair
Trade pricing for their coffees have given the farmer
members of ACOC funding for education including growing
and processing education, and organic farming knowledge
and techniques. The cooperative also gives its members
access to better health services, and investments in
coffee processing facilities. We like this coffee best
roasted medium to Full
City or Vienna.

This
is a Fair Trade offering from the Cooperativa de
Caficultores del Norte de Caldas in Colombia. Low
family incomes led farmers to come together and form
a cooperative in June of 1963. The Coop became
Fair Trade Certified in 2004 which has already resulted
in higher incomes for the farmers and their families.
This coffee is smooth as most good Colombian coffees
are, but with a bit more acidity to make it a more
interesting
cup. Roasting the Norte Caldas to a City
roast brings out raisiny fruit notes, and a chocolaty
bittersweet
aftertaste that lingers pleasantly on the tongue.
It has medium
to light
body,
balanced
with a rich
earthy character and finishing with a pleasant
fruitiness.
Excellent for light to French roasts. |
Colombia
Sierra Nevada

Grown
in full shade, predominantly from trees of the
traditional typica variety, at elevations of 3,300
to 4,300 feet in the mountainous Sierra Nevada
region in northern Colombia. This area is home
to many indigenous populations that have been vastly
affected by drug trafficking and guerilla warfare
that is widespread in this strategically located
region. Fair Trade prices have given local and
indigenous farmers a viable alternative to growing
illegal cash crops. Indigenous people in Colombia
are known for their concern for Mother Earth, the
Law of Creation, which explains the true meaning
of life and the origin of all inhabitants of the
planet. Coffee has become a cultural and living
tradition passed from generation to generation.
The Sierra Nevada is a smooth medium bodied coffee
with distinct cocoa flavors, a fragrant aroma,
and a mild acidity. We recommend a medium to dark
French roast.

Rica Cerro Del Fuego

grown, certified organic, and Fair Trade. From the
highlands of the world famous coffee producing region
of Tarrazu, the Cerro Del Fuego is a wonderful new
Fair Trade offering. Cerro del Fuego or "Fire Mountain",
is named for the largest mountain peak in the region
which is constantly scorched at the top by lightning.
This coffee is produced by the AFAORCA cooperative,
a small collective of 42 farms founded in 1997. Only
a small amount of coffee is produced each year, but
what is missing in quantity is more than made up for
by the outstanding quality and rich flavor of this
coffee. The Cerro del Fuego is a smooth well balanced
coffee, but lively enough with hints of citrus, and
a bittersweet chocolate finish. A medium to full bodied
cup and a crisp and clean acidity make this a versatile
coffee that you are sure to enjoy if you are fond of
Costa Rican coffee. The coffee beans are shade grown
Bourbon, Typica, and Caturra.
It can take
a wide range of roasts, but for best results we
recommend
a medium
to French roast. |
El
Salvador San Mauricio Pipil

Last
years extremely popular Torogoz was produced by the
same members of APECAFE in the San Mauricio region
of El Salvador. The Pipil is essentially the same
coffee from the same region, but renamed for the
region in which it is produced. One of our favorites,
this is a rare coffee from the highlands in eastern
El Salvador, the source of some world class coffees
in the past few years. The cooperative of small farmers
who grow this coffee suffered greatly from the civil
war in El Salvador. They had to pay war taxes, and
their coffee processing facilities were burned in
the guerrilla attack in November,1989, thus leaving
them unable to collect and process coffee during
that period. During the postwar times many co-op
members were kidnapped and extorted to pay ransoms
to criminals who were mostly ex-militants. Most of
these small producers are Mayan ancestors and they
dedicated their productions in memory of their ancestors
by continuing to grow and harvest their coffee in
harmony and religious respect for the environment.
Times continue to be difficult for these farmers
due to the low prices of coffee, which is why the
Fair Trade prices are so important. The coffee is
organically grown under a rich canopy of shade trees,
making the farms a sanctuary to many migratory birds
and other endangered local species like the Turquoise-Browed
Motmot (Torogoz).The Torogoz has a rich flavor and
fragrant aroma, with a pleasant earthyness and a
hint of cocoa. We recommend a medium to full city
roast.

Pronounced "way-way-ten-ang-oh",
an exciting name for a lively coffee! The growers
of this fine coffee are members of the Asobagri
Cooperative, a co-op that provides many benefits
to its members in exchange for upholding strict
quality standards. The co-op also requires the
organic farming members to cultivate shade trees,
practice soil conservation, and use composting
methods. This is a quality Guatemalan coffee with
a bright spicy-peppery acidity, and a smooth, rich
body. The coffee finishes with a distinct rich
smokiness that fades into a spicy chocolate finish.
This coffee sells out quickly each year, but we
were able to purchase a respectable amount and
should be able to fill orders for most of the year. Recommended
roast: Light roast to French.

were pleasantly surprised with our first taste
of this new coffee from the heart of the Guatemala rainforests.
The Coban coffee project is quite unique due
to the fact that it not only strives to improve
the living conditions of the producers but it
is also dedicated to the preservation of the
bio-diverse environment of the Sierra de las
Minas Biosphere Reserve. The 583,000 acres, encompassed
within the reserve, are home to 885 species of
birds, mammals and reptiles; roughly 70% of the
registered species in Guatemala and Belize. The
producer groups are located in the Northern Buffer
Zones of the Sierra de las Minas Biosphere Reserve
in the regions of Alta Verapaz and Baja Verapaz.
There are two Mayan producer groups that consist
of 462 farms and processing/export plants located
in 23 communities. All of which are certified
organic by Mayacert/BCS, and as of 2004 they
achieved Fair Trade certification. The sustainable
coffee farms near this delicate biosphere diminish
the negative impacts of agriculture on the environment.
The taste of Coban this starts with a very clean,
mildly sweet flavor with a pleasant fruitiness
that dances in the mouth and fades gently to
a smooth, cocoa and smokey finish. The cup is
quite dynamic due to its intense brightness that
heightens the other charactaristics. Overall
a nicely balanced cup that really should be enjoyed
as a single origin without blending. We recommend
a medium to Full City or French roast.

Grown
by Members of the POSI Cooperative who live in 23
communities in Motoziotla and Siltepec in Chiapas,
Mexico. Strictly high grown at altitudes between
1200 and 1800 feet and wet processed. This coffee
has a full, rich flavor with a bit of sweetness like
a premium Hawaiian or Guatemalan coffee. Best for
a City to Full City roast, as some of the more delicate
bright notes are lost in a darker roast, but it does
roast well to the darker stages.

The
Aldea Global Cooperative recently reached a milestone
of success with the fruit of their labors, the coffee
5 de Junio, placing respectfully high in the 2006
cup of excellence. The cooperative is now over 500
members strong. Located in the mountains of northern
Nicaragua, this is a premier coffee growing region
and the coffee is grown at elevations of 1100 to
1400 feet. One of the mandates of this cooperative
is to encourage the highest quality standards of
its Members through training programs, and the result
is a very tasty coffee! The coffee is Bourbon, Caturra,
and Maracatu varieties, carefully washed and sun
dried. The coffee is very rich tasting with full
bodied sweet chocolate notes, a hint of dark cherry,
and balanced with light citrus floral acidity. Recommended
roast: medium to Full City or French.

In
the highlands, the fertile rich soils and temperate
climates are ideal for producing high quality gourmet
coffee. The coffee is grown at approx. 1200 to 1400
meters above sea level in the Matagalpa region. The
coffee trees are mostly of the older Bourbon variety
with some Caturra and a small amount of Catuai. The
coffee is certified organic, shade grown by OCIA
Iinternational (The Organic Crop Improvement Association).
The Cooperative producing this coffee, CECOCAFEN,
is a group of nearly 2000 coffee farmers who have
joined together to improve coffee quality and thier
own quality of life. Proceeds from coffee sales have
helped provide education, infrastructure improvements,
and food security for the men and women that grow
the coffee. The complex aroma, medium body, slight
wineyness and clean finish are unique characteristics
that only a great Nicaraguan coffee can offer. Recommended
roast: medium to Full City or French.

grown. Grown in the Segovia region of Nicaragua by
members of PRODECOOP, a cooperative of over 2000
families. This is a good clean coffee with a decent
body and a sweet finish with mild chocolate and vanilla
tones. The aroma of the Segovia hints at a mild cherry
toned fruit character and has a hint of nutty flavor
and caramel syrup sweetness. PRODECOOP was established
in 1993 to promote organic farming techniques, integrated
systems of production, conservation of natural resources,
and economic diversification among its members.The
co-op remains committed to producing coffee of the
highest quality. In 2004, co-op members participated
in the Nicaraguan cupping competition, “The
Cup of Excellence,” in which the co-op was
awarded five of the top ten quality awards. We recommend
a medium to dark French roast.

grown. This coffee is very high grown in northern
Peru, where many of the the organic coffee growers
have been certified organic for over 2 decades. Grown
from heirloom arabica typica cultivars which require
a heavy shade cover to thrive. This area is also
home to many rare birds such as the critically endangered
White-winged Guan and the Peruvian Plantcutter. Bird
guano is used in the coffee plantation as organic
fertilizer. A wonderful South American coffee: a
soft acidity, a very smooth medium body, a pleasing
sweetness, and finishing with a subtle smokey flavor.
Well suited to medium and dark roasts.

The
Penachi region of Peru is very desolate and remote,
and there is very little commercial activity beyond
coffee and sustenance harvesting of tropical fruit
and herbs. The coffee is grown at an elevation between
1100 and 1500 meters above sea level in the mountains
that separate Peru from Equador. When you try this
coffee, you will be taken by suprise and immediately
recognize the hard work that has gone into this fine
coffee. It is bright and lively, with good acidity,
medium body and with a pleasurable sweet finish.
A nice full bodied cup with subtle floral tones in
the aroma. Recommended roast: medium to Full City
or French.

coffee is believed to have originated, near the towns

of these beans are from wild Arabica trees, giving

have found to be very appealing. This is a wet processed
coffee similar to a Yirgacheffe with bright citrusy
notes and a semi sweet chocoloate rich flavor. The
growers of this coffee are members of the Oromia Coffee
Farmers
Co-op,
a large
cooperative
with
22,734
farmer members. We offered this coffee when we first
started selling green beans, but have not been able
to offer it again until now because it just
became certified Fair Trade. We recommend a medium
to a Full City or Vienna roast. |

grown. Harrar is a dry processed coffee reminiscent
of ancient times, and indeed springs from the birthplace
of the Arabica coffee plant. This is a bold and intense
medium bodied cup with an enticing berry/fruit aroma.

roast. The growers of this coffee are members of
the Oromia Coffee Farmers Co-op, a large cooperative
with 22,734 farmer members. This coffee just became
certified Fair Trade. We recommend a Vienna to a
French or Italian roast.

Fair Trade. Yirgacheffe is a prized variety among
many coffee connesiurs for its intense brightness,
citrusy floral notes, and delicate chocolate sweetness.
Perfect for those who prefer a robust african coffee.
This coffee offers a sweet, light-bodied cup with
a hints of citrus, a chocolate roast taste, and an
aromatic finish. Best for a City to Full City roast,
as some of the more delicate aromas and flavors are
lost in a darker roast, and a too-light roast will
have a sour, acidic note.

is a green coffee from the Sidamo region of Ethiopia.
The growers of this coffee are members of the Oromia
Coffee Farmers Co-op, a large cooperative with 22,734
farmer members. Ethiopian Sidamo is a rich earthy
coffee with pungent fruity notes and a hint of spiciness.
This is a richer, more complex coffee than the Yirgacheffe,
and it can be roasted a little darker. To accentuate
the finer notes we recommend a medium to full city
roast.

grown. From the scenic highland slopes of the Gayo
Mountains near Laut Tawar in the Takengon region
of Northern Sumatra, comes the exotically aromatic
Takengon Sumatra coffee. There are over 200 small
coffee producers who contribute to this very important
OCIA certified organic coffee production. The farmers
and communities of this remote region face a number
of environmental and socio-economic challenges, including
soil erosion, deforestation, low and unstable incomes.
The organization, production, technical assistance
and higher prices for certified organic coffee help
these remote farmers by being able to generate a
better income for themselves and improve the economic
basis in the commmunities. The organic Sumatra Takengon
semi-washed coffee is full bodied, slightly fruity,
and clean with a sweet finish. This coffee is great
as a varietal, blender and perfect for espresso.

Indonesia. The Gayo Organic Coffee Farmers Association
(PPKGO) is a cooperative with thousands of members
who are dedicated to producing high quality certified
organic coffee. The Fair Trade price has given the
grower members the resources needed to improve the
coffee producing infastructure, promote sustainable
agriculture
and environmental preservation, and provide training
in coffee production. The coffee is bold and full
bodied balanced with a rich woody, earthy
cocoa flavor and roasted caramel sweetness. We like
this
coffee in a darker roast which tends to mellow the
acidity and bring out the underlying sweetness. We
recommend a Full City to an espresso roast. |

very popular Peaberry coffee from the KNCU cooperative
in Tanzania has finally returned! We are please
to share the good fortune of obtaining this favorite
coffee once again. The beans are Bourbon and Keint
varieties, grown by members of KNCU, Kilimanjaro
Native Cooperative Union, a cooperative of indigenous
farmers of the northeastern Kilimanjaro region
of Tanzania. Farmers participate in the co-op democratically,
and each year they elect delegates from among co-op
members to implement policies and programs. The
coffee revenues have helped to support the founding
and operation of schools for farmers’ children
and funded an organic production program. This
coffee has a strong character and is well balanced.
It is full bodied with a medium light acidity,
a somewhat earthy African sweetness, and a hint
of apricot fruitiness. Because of the smaller bean
size this coffee roasts a little faster than the
normal size flat green coffee. We have also noticed
it tends to expand a little more than regular coffee
beans. We
recommend a Full City to an espresso roast. |

Timor
coffees have become one of our best sellers. From
East Timor, an island between Australia and Indonesia,
recently liberated from Indonesia. Coffee is a very
important crop that is helping the Timorese rebuild
a shattered economy, and the sale of this coffee
directly supports the organic growing association
and its farmers. This coffee is pale like a good
Java, with a full body and deep but subtle spice
in the flavor, with a hint of acidity to balance
the flavors. The Maubesse is a little more robust
than the Aifu, but is still remarkably smooth. We
like this coffee as a City roast (medium-dark), but
it is a versatile coffee that can be roasted light,
medium, or dark.

Ermera
is an area of Timor-Leste (formerly called East Timor)
with a long tradition of coffee growing and was the
site
of the
main coffee
plantation when Timor was occupied by the Portuguese.
Timor won independence from Indonesia in 1999, and
the economy is slowly being rebuilt thanks in part
to a growing coffee trade. Thanks to Fair Trade prices,
the poverty stricken members of the CCT cooperative
(Cooperativa Café Timor)
have access to free health care, which has saved
many lives since the program started. The Ermera
is a very clean coffee similar to the better
wet processed Javas. It has a satisfying full body
but also some delicate flavors and aromas reminiscent
of a fine Yirgacheffe. With its rich sweetness, earthy
spicy accents, and fruity nose this is a great coffee
to drink strong and black, just like the growers
in
Timor-Leste
prefer
to drink it. We like the Ermera roasted to a City
or Full city, but with its full body it holds up
well to a dark roast.

grown. Royal Select refers to the decaffeination
process of this coffee, which is a water based completely
chemical free process similar to the Swiss Water
Process. Processing the coffee in Mexico eliminates
the need to ship the coffee to the Swiss Water processing
plant in Canada and then to the United States, reducing
the cost and price of this coffee as well as reducing
the environmental impact of producing this coffee.
The Mexico decaf is a full bodied coffee with a well
rounded aroma, earthy taste, and a smooth lingering
sweetness. A slightly speckled appearance of the
unroasted green coffee is a normal result of the
natural water decaffeination process, and does not
affect
the appearance of the finished roast which is uniform
with most roasting techniques. We recommend a medium

year. It is bright and lively, with good acidity,
medium body and with a pleasurable sweet finish.

the aroma. A great choice for those who want a decaf
that is nearly as strong in flavor as its fully caffeinated
parent. Recommended roast: Medium to Italian or Espresso.

the scenic highland slopes of the Gayo Mountains
near Laut Tawar in the Takengon region of Northern
Sumatra, comes the exotically aromatic Takengon Sumatra
coffee. There are over 200 small coffee producers
who contribute to this very important OCIA certified
organic coffee production. The farmers and communities
of this remote region face a number of environmental
and socio-economic challenges, including soil erosion,
deforestation, low and unstable incomes. The organization,
production, technical assistance and higher prices
for certified organic coffee help these remote farmers
by being able to generate a better income for themselves
and improve the economic basis in the commmunities.

This decaf has rich flavor, full body and low acidity.
