California Lager

Here is a kit for the beer style native to our part of the world! In the California steam beer style, this is a full bodied amber lager with a hint of caramel and a strong hop character. Our easiest lager to brew because this style can be fermented at ale temperatures (60 to 65 oF). Contains organic malt extract, organic malted barley, organic hops, organic bottling sugar, Irish Moss, recipe, and instructions. Produces an original gravity of approximately 1.050. IBU's: 40. Recommended yeast for this kit (Not included! Order separately): .

Recommended yeast for these kits: (Not included! Order separately): Wyeast #2112 California Lager or White labs San Francisco Lager. Dry yeast choice: SAFLAGER S-23 Lager Yeast.

Bottling sugar options: Try any kit with organic corn sugar for bottling. Corn sugar provides a cleaner more neutral finish with less sediment in the bottle than DME. Dry malt extract (DME) for bottling is what we include in most of our kits, which gives a creamier head, fuller body, and maltier flavor than corn sugar. If you do not need bottling sugar, order any of our kits without it for $1 less.

Ethiopian Yirgacheffe (Fair Trade)

Certified organic, shade grown, and Fair Trade. The growers of this coffee are members of the Oromia Coffee Farmers Co-op, a large cooperative with 22,734 farmer members. This coffee also just became certified Fair Trade. Yirgacheffe is a prized variety among many coffee connesiurs for its intense brightness, citrusy floral notes, and delicate chocolate sweetness. Perfect for those who prefer a robust african coffee. This coffee offers a sweet, light-bodied cup with a hints of citrus, a chocolate roast taste, and an aromatic finish. Best for a City to Full City roast, as some of the more delicate aromas and flavors are lost in a darker roast, and a too-light roast will have a sour, acidic note.

New Crop German Pellet Hops: 20% Off

The ship from Germany has just landed, and we are excited to offer a brand new variety as well as two organic hops that have not been available for some time.

Smaragd: 8.5% Ave. Alpha Acid. This is a new breed from Germany developed in the last 10 years and virtually unknown by American brewers. With a distinct fruity nose balanced with flowery hoppy notes, Smaragd is the European response to varieties like Simcoe and Amarillo. It has a more prominent nose than most European varieties, but the fruitiness is more subdued and the overall impression is balanced and refined with a slight nuance of spice. The bitterness is of medium intensity allowing generous (but not excessive!) use in the boil kettle. A good choice for dry hopping. The hints of lemon and orange marmalade work well with Belgian Pale Ales or Imperial Pilsner.

Mittlefrüeh: 4.7% Ave. Alpha Acid. We are overjoyed to once again offer this organically grown truly noble hop. Mittlefrüeh has a pleasant, mellow, spicy, flowery aroma with subtle hints of herbal. This is one of only a few hops considered suitable for making a true traditional German lager. We have a very limited quantity in stock. They are very difficult to grow organically because they are highly susceptible to pests and diasease, which is why we have been unable to import them for many years.

Opal: 9.2% Ave. Alpha Acid. This is a new German hop from the German research center Hüll that exhibits excellent aroma characteristics combined with a respectable alpha acid level. Opal is a European jewel which has a sweet spice, slightly peppery aroma and flavor combined with a light clean citrus fruit aroma. This hop does well in German wheat beers, summer ales, Helles, light European lagers, light ales, Saisons, and Belgian ales. A good substitute for East Kent Goldings, Styrian Goldings, or Tettnanger.

All of our pellet hops have been cold stored in nitrogen flushed foil bags, and so the quality is nearly as high as the fresh batch we have just recived. While supplies last!! Whole hops degrade faster, especially the lower alpha hops. New Zealand whole hops retain freshness better because of advanced packaging technology utilized directly upon harvesting.
