Zarkesh of Eugene, OR*
The
addition of a unique blend of uncommon spices
makes this recipe stand out from the crowd of
Belgian style beers that are all the rage. Juniper
berries, cardamon, and bitter orange peel come
together in just the right amounts in this beer
to create a tongue prickling zing to complement
the sturdy, full bodied, sweet malty base Belgian
Ale style. Just enough hops to add a hint of
bitter to balance the sweet. Sure to impress
your own homebrew fans just as it did the judges
at the 2010 National Organic Brewing Challenge!
As with most Belgian style beers, this recipe
just gets better with age and will likely present
at its best 6 months after brewing. Contains
organic malt extract, organic malted barley,
organic malted wheat, organic hops, organic biter
orange peel, organic cardamon, organic juniper
berries, organic dry malt extract (DME) for bottling,
Irish Moss, recipe, and instructions. Produces

NEW! Bolivia
Montanas Verde (Fair Trade) 
Shade
grown, certified organic, and Fair Trade. Grown
in the lush mountains near the Caranavi region
of Bolivia, this coffee is quickly becoming
a new favorite. Perhaps it has something to
do with the passion for excellence that these
small scale growers have when it comes to growing
coffee. Fair Trade pricing continues to give
the farmers the best possible incentive to
produce outstanding quality: the means to lift
themselves out of poverty through their own
hard work. Bolivia is a country of very small
farmers who have been left out of the gourmet
coffee market until just a few years ago. The
Montanas Verde is sweet and light to medium
bodied coffee with clear chocolate and nutty
flavors with hints of spice and caramel. Aromas
of apricot and plum give the cup a delightful
finish, as long as this coffee is not roasted
too dark. Roasting past full city might cook
away some of the more subtle flavors and aromas.
We recommend a medium to full city roast.

Crop American Whole Hops:
New
Shipments of organically grown American hops have
been arriving for the past few months, and we finally
caught up enough from the busiest holiday season
ever to pack these up and offer them to you! With
these new offerings you can brew a wider range
of organic beers than ever before, and also support
the American farmers who are finally starting to
grow organic hops.
Bravo: 13.5%
Ave. Alpha Acid. This is a new breed of American
hops, which are rapidly becoming a favored bittering
hop. Ours are organically grown in the state of
Idaho. Bravo hops are descended from Zeus and Nugget.
They have a very clean and smooth bitterness and
highly pleasant aroma. Aromas of light fruit (apple
and pear) with a flowery note dominate. Very light
hint of tangerine and apricot, and slight earthy
background. Exhibiting bittering qualities similar
to Chinook, Bravo is a great hop for stouts, IPA's,
and other big beers. Because this hop has such
a pleasant aroma it is a great candidate for a
single hop beer..

Centennial: 6.5%
Ave. Alpha Acid. We are excited to bring you some
top quality classic American hops, organically grown
in Washington State. We only have a few pounds this
year so they are only available to our homebrewing
customers, but if these do well we hope to offer
a larger quantity next year. Centennial hops were
developed from a cross between Brewer's Gold and
a selected USDA male. They have a pungent, citrusy
aroma with floral tones balanced with a good bitterness.
Sometimes called Super Cascade, these are the signature
hops for hoppy American beers like American Pale
Ale and American India Pale Ale.

Chinook: 10.4%
Ave. Alpha Acid. Our customers have been asking
for organic Chinook hops for a long time, so we
are pleased to bring you these fresh from the cool
Mountains of Colorado. Chinook are widely used
as a powerful bittering hop because they exhibit
a sharp bitterness sought after in big beers like
IPA and American Barley wine. Aroma is piney and
herbal with hints of citrus. Can be cloying if
overused. Bred from a cross between Petham Golding
and a USDA-selected male. Substitutions: Brewers
Gold, Bullion, Cluster, Galena, Nugget.

Horizon: 10.2%
Alpha Acid Units. These are locally grown in here
in California, and are a fine example of the breed.
Horizon are a great bittering hop because they
typically offer a softer bitterness from the lower
cohumulone levels. Has similarities to Simcoe with
a clean citrusy floral aroma with hints of orange.
A sister hop to Nugget, these are great for Browns,
Porters, and other ales where a soft bitterness
is desired. Can contribute very pleasant flavors
and is widely regarded as a good dual purpose hop.
Try in recipes that call for: Simcoe, Magnum, Hallertaur.

Nugget: 13.6%
Ave. Alpha Acid. This year we have received a limited
quantity of organic Nugget hops fresh from the
mountains of Colorado. A powerful bittering hop
with heavy herbal characteristics. Aroma is pungent
and spicy with faint citrus notes. Parentage includes
Brewers Gold, Bavarian hops and unknown others.
Substitutions: Columbus, Chinook, Wye Target, Galena,
Magnum.

Blue Agave Nectar: 15%
Off
Brewing
with Agave is a lot like brewing with honey. Once
you get past the sticky part, you have an easy way
to add highly fermentable sugar that does not add
much flavor and gives a crsip character to the finished
beer. Great to increase the alcohol content of Mead
and Cider as well. Try 1 to 3 pounds as an adjunct
for 5 gallons, works well with Mexican and American
style lagers, dark lagers, wheat beers, and Saisons.
Can used like honey to make Agave mead, and of course
Agave is well known as the key ingredient in tequila.
Beers and meads fermented with agave in the secondary
fermenter will take on a more pronounced "tequila
flavor". Try it in your next chili beer for
a brew that will really pop with heat and flavor.
Agave
nectar is fructose sugar extracted from the the Blue
Agave cactus that thrive in the volcanic soils of
Southern Mexico. There are over 100 species of Agave,
but the Blue Agave is the most highly prized because
of the high carbohydrate concentration and clean
sweet flavor of the resulting nectar. The taste is
similar to honey, but lighter, with a more intense
sweetness and more neutral flavor. With a lower glycemic
index than most other natural sweeteners, consuming
it is less likely to raise blood sugar or trigger
the body's fat storage mechanisms.

Organic
Elder Flower (dried)
Elder
flowers have long been used in beverage recipes,
bringing the light fragrant scent of a summer garden
and refreshing floral herbal flavor to world renowned
beverages such as St. Germaine. To this day many
still make the traditional elderflower champagne,
which is simply a light sparkling herbal wine made
with elderflowers and sugar. The aromatic character
of elderflower pairs well with summer ales, Saisons,
light wheat beers, or a twist on a Witbier. It
blends well with citrus thus it is worth a try
in a hoppy IPA to compliment the citrus flavors.
For homebrewing 5 gallon recipes, use 1 to 2 oz.
in the boil for a unique floral flavor and herbal
bitterness, or steep 1 to 4 oz. at the end of the
boil to infuse the delicate aromatic flavor of
elder flower into a homebrew. Can also be used
in the secondary fermenter in the same maner as
dry hopping, or create an infusion with vodka,
strain, and add at bottling.
Elder
flowers have diuretic, laxative, anti-inflammatory
and antiviral properties. In traditional herbal
medicine, elderflowers are used to treat allergies,
colds, and other respiratory ailments. It is also
commonly used to treat fungal and ear infections,
and drinking elder flower tea can help in detoxification
of the body by promoting perspiration and urine

Sarsparilla
Sarsparilla
is famous as the main ingredient in the beverage
of the same name, and is also an essential flavor
in most root beer recipes. For brewing it adds
a pleasant aromatic root beer flavor that works
well in dark beers or good old fashioned brewed
from scratch root beer. Use 1 to 2 oz per gallon
added to the boil for the last 20 to 30 minutes.
Combines well with chicory, dandelion root, ginger,
juniper, licorice, and anise.
Sarsaparilla
root has been used for centuries by the indigenous
peoples of Central and South America for sexual
impotence, rheumatism, skin ailments, and as a
general tonic for physical weakness. Sarsaparilla
has historically been used in herbal medicine to
treat liver disease, and syphilis, and as a general
tonic and blood purifier. #OS14

Heather Tips & Flowers
Heather
Tips are an essential ingredient in traditional
Scottish Heather Ale. Use in the boil to add bitterness,
or at the end of the boil for the distinct floral
Heather flavor and aroma. Heather adds an earthy,
herbal flavor and a light floral peat moss and
fresh mown hay aroma. In the boil, heather will
add some bitterness- Heather was actually outlawed
at one point in England because the Scots used
Heather for bittering instead of importing English
hops. Heather can also be added to the secondary
fermenter, or used as a filter bed for the mash
runoff. Use 1 oz. to 8 oz. during the boil or in
the secondary fermentor. Heather has been used
in traditional medicine to treat urinary & kidney
problems, and has mild sedative properties. #OS24

Grapefruit Peel
Grapefruit
peel is an excellent substitute for bitter orange
peel in a Belgian Wit. The dried peel retains much
of the grapefruit characteristic which compliments
beers hopped with a citrus character. Try this
in Saison, IPA, or a holiday spiced beer. With
the characteristic bitter and sweet flavors grapefruit
can add just the right zing your your next special
recipe. Use 1/4 to 1 oz. in the boil for more bitterness,
or steep at the end of the boil or in the secondary
fermenter for a sweeter taste. Grapefruit peel
is a rich source of Vitamin C and antioxidant nutrients,
most notably lycopene, which has been shown in
a Harvard Medical Center study to reduce the risk
of prostate cancer. #OS23

Hibiscus Flower
Hibiscus
is a pleasant flavor that goes well in fermented
beverages when a sweet, fruity tart flavor is a
desired quality. Has a rose/floral aroma and a
sweet tartness with cherries and citrus.This works
well in lighter ales such as Saisons, wheats, or
mild ales. This is also an outstanding flavor in
meads, ciders, and fruit wines. The color of hibiscus
is ruby red, and in quantities over 1 oz per gallon
the effect on the color of the finished beer can
be significant- most often the finished beer will
have a pink hue. Use 1/2 oz to 8 oz. for a 5 gallon
batch depending on the effect desired. Studies
have shown that drinking hibiscus tea can effectively
lower high blood pressure and reduce high cholesterol
levels in many individuals. Hibiscus is high in
vitamin C and antioxidents, and has been used in
many cultures over the centuries as a healthy tea
drink which some find helpful for weight loss.
