If you really like strong beers, and if a standard IPA just doesn't have enough hop kick for you, our new organic double IPA is sure to give you the mouth puckering nose crinkling hop experience you are looking for. This is a strong, malty American style IPA bursting with strong hop bitterness, a vibrant hop aroma, and citrusy hop flavor. With 6 hop additions and over 5 ounces of organic hops (not counting the optional 2 oz. of dry hops), this IPA is a true legacy to organic hop growers. We also call it Legacy DIPA because the original recipe idea came from Co-op Member AJ, who left our staff to become the head brewer at Ukiah Brewing Company in California. For a hoppier aroma, try dry hopping with organic American Summit, New Zealand Cascade, or New Zealand Saaz hops (purchase separately). Bottling sugar options: Try any kit with organic corn sugar for bottling. Corn sugar provides a cleaner more neutral finish with less sediment in the bottle than DME. Dry malt extract (DME) for bottling is what we include in most of our kits, which gives a creamier head, fuller body, and maltier flavor than corn sugar. If you do not need bottling sugar, order any of our kits without it for $1 less.

2009 Fuggles Whole Hops: 4% Ave. AAU. Used in the finest English style ales for aroma and flavor, and will infuse a mild hoppy flavor and pleasant aroma in the best pale ales, bitters, and browns. The light bitterness and clean hop flavor and aroma make a good combination with high alpha hops such as Target or Pacific Gem. A good substitute for Willamette or Styrian Golding.

2009 Kent Goldings Whole Hops: 7% Avg. AAU. One of the finest hops in the world, the traditional old English hop developed in the late 1700's. Excellent for English style ales and Porters, this is a mild hop with a pleasant flowery aroma and a refined flavor. Also suitable for many Belgian, French, and Scottish ales. Possible substitutions: US Goldings, First Gold, UK progress.

2009 Belgian Saaz Whole Hops: 5.3% Avg. AAU. The very mild spicy, earthy aroma hop associated with European Lagers. This is the hop you will want for your finest European style Pilsners, and it will shine in wheat beers and Belgian style ales. Whitbread Goldings Variety: 6.1% Ave. Alpha. Often referred to simply as "WGV", this hop was developed in 1911 from Bates’s Brewer at the hop farm in Beltring, Kent later owned by the London brewer Whitbread. WGV is used today in McMullen’s AK, and is a parent to the modern First Gold and Progress hop varieties. Whitbread Goldings Variety is similar to Goldings, but with a stronger flavor that is pleasant and hoppy. Produces a sweet, fruity flavor with a mild, clean bitterness. Good as a distinctive dry hop with a fruity, mild and clean flavor. Organically grown in Belgium from English rootstock. Possible substitutions: UK Kent Golding, UK First Gold, UK Progress.

New Varieties!: Organic Pellet Hops:

American Fuggles: 6% Ave. Alpha. Grown in Oregon on a farm that is long established for growing excellent hops. Despite many years of experience growing hops conventionally, using organic methods has been a challenge, requiring a lot of extra work, but the quality of these hops is definitely worth the extra effort. A mild and pleasant hop, with earthy and fruity character that works well with many different flavors. The light bitterness and clean hop flavor and aroma make a good combination with high alpha hops such as Pilgrim or Pacific Gem. A great choice for hoppy American microbrew style ales, and works surprisingly well in Belgian beers. Recommended substitute for UK Fuggle, Willamette, Styrian Golding, US Tettnang

Belgian Cascade: 3.2% Ave Alpha. These European grown Cascade hops are a real treat for brewers who like the citrus character of Cascade, without being overpowered by it. A milder version of Cascade allows you to experience the more subtle characteristics of this popular breed of hop: the light flowery aroma with a hint of herbal, the sweet citrus tones, and overall very clean flavor. Because of the milder aroma these Cascade blend well with other hops to help achieve a nice balanced beer. Good in recipes calling for Amarillo, Cascade, Centennial, Challenger, or Chinook.

Pilgrim: 10.2% Ave. Alpha. A new dual-purpose hop released by the Horticulture Research Institute at Wye in 2001, Pilgrim has a pleasant aroma and strong bitterness content. Because of its high alpha it has been compared to British Target more than any other variety, but it has a much hoppier aroma than Target due to its higher levels of Humulene and Challenger-like Selinene levels. Exhibits an earthy, spicy, flavor and pronounced hoppy nose. Also known as Wye Pilgrim. Organically grown in Belgium from English rootstock. Possible substitutions: Target, Northdown & Northern Brewer.

Brewing with Agave is a lot like brewing with honey. Once you get past the sticky part, you have an easy way to add highly fermentable sugar that does not add much flavor and gives a crsip character to the finished beer. Great to increase the alcohol content of Mead and Cider as well. Try 1 to 3 pounds as an adjunct for 5 gallons, works well with Mexican and American style lagers, dark lagers, wheat beers, and Saisons. Can used like honey to make Agave mead, and of course Agave is well known as the key ingredient in tequila. Beers and meads fermented with agave in the secondary fermenter will take on a more pronounced "tequila flavor". Try it in your next chili beer for a brew that will really pop with heat and flavor.

Agave nectar is fructose sugar extracted from the the Blue Agave cactus that thrive in the volcanic soils of Southern Mexico. There are over 100 species of Agave, but the Blue Agave is the most highly prized because of the high carbohydrate concentration and clean sweet flavor of the resulting nectar. The taste is similar to honey, but lighter, with a more intense sweetness and more neutral flavor. With a lower glycemic index than most other natural sweeteners, consuming it is less likely to raise blood sugar or trigger the body's fat storage mechanisms.

Organic Chicory Root

Chicory root has long been used as a beverage ingredient. The roasted root has a coffee like flavor and aroma which blends well with coffee and chocolate. Chicory is world famous as the key ingredient in coffee blends from New Orleans. In brewing use 1 to 8 oz. added at the end of the boil to infuse the smooth roasted flavor into the brew. Great for coffee or chocolate stouts, a fine example of a Chicory beer is Dogfish Head's Chicory Stout. Blends well with Cacao, coffee, dandelion root, and licorice.

Chicory contains no caffeine, making it a satisfying alternative (or additive) to coffee. It imparts less bitterness than coffee does, and Chicory coffee blends are noted for thier smooth flavor and low acidity. Because it is more water soluble than coffee, a brewed beverage that is half coffee and half chicory should be made with half the amount of coffee you would normally use, plus half that amount of chicory (1 scoop of chicory for every 2 scoops of coffee).

Since ancient times chicory has been used for liver disorders, and promoting health of the urinary system and kidneys. Consuming chicory can stimulate the cleansing of the body and enhances toxins removal. Medical research has shown it can reduce the heart rate, thus it can help counteract the stimulating effect of caffeine when blended with coffee. #OS8

Organic Elder Flower (dried)

Elder flowers have long been used in beverage recipes, bringing the light fragrant scent of a summer garden and refreshing floral herbal flavor to world renowned beverages such as St. Germaine. To this day many still make the traditional elderflower champagne, which is simply a light sparkling herbal wine made with elderflowers and sugar. The aromatic character of elderflower pairs well with summer ales, Saisons, light wheat beers, or a twist on a Witbier. It blends well with citrus thus it is worth a try in a hoppy IPA to compliment the citrus flavors. For homebrewing 5 gallon recipes, use 1 to 2 oz. in the boil for a unique floral flavor and herbal bitterness, or steep 1 to 4 oz. at the end of the boil to infuse the delicate aromatic flavor of elder flower into a homebrew. Can also be used in the secondary fermenter in the same maner as dry hopping, or create an infusion with vodka, strain, and add at bottling.

Elder flowers have diuretic, laxative, anti-inflammatory and antiviral properties. In traditional herbal medicine, elderflowers are used to treat allergies, colds, and other respiratory ailments. It is also commonly used to treat fungal and ear infections, and drinking elder flower tea can help in detoxification of the body by promoting perspiration and urine production. #OS6

Organic Sarsparilla

Sarsparilla is famous as the main ingredient in the beverage of the same name, and is also an essential flavor in most root beer recipes. For brewing it adds a pleasant aromatic root beer flavor that works well in dark beers or good old fashioned brewed from scratch root beer. Use 1 to 2 oz per gallon added to the boil for the last 20 to 30 minutes. Combines well with chicory, dandelion root, ginger, juniper, licorice, and anise.

Sarsaparilla root has been used for centuries by the indigenous peoples of Central and South America for sexual impotence, rheumatism, skin ailments, and as a general tonic for physical weakness. Sarsaparilla has historically been used in herbal medicine to treat liver disease, and syphilis, and as a general tonic and blood purifier. #OS14

Organic Heather Tips & Flowers

Heather Tips are an essential ingredient in traditional Scottish Heather Ale. Use in the boil to add bitterness, or at the end of the boil for the distinct floral Heather flavor and aroma. Heather adds an earthy, herbal flavor and a light floral peat moss and fresh mown hay aroma. In the boil, heather will add some bitterness- Heather was actually outlawed at one point in England because the Scots used Heather for bittering instead of importing English hops. Heather can also be added to the secondary fermenter, or used as a filter bed for the mash runoff. Use 1 oz. to 8 oz. during the boil or in the secondary fermentor. Heather has been used in traditional medicine to treat urinary & kidney problems, and has mild sedative properties. #OS24

Organic Grapefruit Peel

Grapefruit peel is an excellent substitute for bitter orange peel in a Belgian Wit. The dried peel retains much of the grapefruit characteristic which compliments beers hopped with a citrus character. Try this in Saison, IPA, or a holiday spiced beer. With the characteristic bitter and sweet flavors grapefruit can add just the right zing your your next special recipe. Use 1/4 to 1 oz. in the boil for more bitterness, or steep at the end of the boil or in the secondary fermenter for a sweeter taste. Grapefruit peel is a rich source of Vitamin C and antioxidant nutrients, most notably lycopene, which has been shown in a Harvard Medical Center study to reduce the risk of prostate cancer. #OS23

Organic Hibiscus Flower

Hibiscus is a pleasant flavor that goes well in fermented beverages when a sweet, fruity tart flavor is a desired quality. Has a rose/floral aroma and a sweet tartness with cherries and citrus.This works well in lighter ales such as Saisons, wheats, or mild ales. This is also an outstanding flavor in meads, ciders, and fruit wines. The color of hibiscus is ruby red, and in quantities over 1 oz per gallon the effect on the color of the finished beer can be significant- most often the finished beer will have a pink hue. Use 1/2 oz to 8 oz. for a 5 gallon batch depending on the effect desired. Studies have shown that drinking hibiscus tea can effectively lower high blood pressure and reduce high cholesterol levels in many individuals. Hibiscus is high in vitamin C and antioxidents, and has been used in many cultures over the centuries as a healthy tea drink which some find helpful for weight loss. #OS26

New: FreshRoast SR Series Coffee Roasters: From $109.90

The long awaited new model coffee roaster from Freshbeans has arrived in our warehouse. There are actually 2 models. Both models have double the capacity of the Freshroast Plus 8 model- up to 120 grams or or about a quarter of a pound per roast cycle. Some other design improvements include a digital timer, a better chaff collecting basket, and the roasting jar has an improved base that will not overheat with dark roasts, which caused problems with warping in the previous model. The SR series roasters are quiet so you can hear the crackling of the beans, and the small chamber and fan make this one of the more energy efficient coffee roasters on the market.

The SR300 is a basic, no frills roaster which is a great for beginners roaster with a preset temperature setting and an adjustable digital timer. The maximum time to set the timer is 9.9 minutes. At any point during the roast sequence you can add 6 seconds with each tap of the button. Time can be subtracted using the same method. The timer can be overridden by tapping the "Cool" button, causing the roaster to go into the cooling mode for 3 minutes. When you purchase this roaster from us, we one pound of organic Fair Trade green coffee beans which you can choose from our wide selection.

FreshRoast SR-300 Roaster + 1 lb. coffee: $109.90

The SR500 has 2 additional features which give the user a great deal of control over the roast cycle. With the adjustable fan speed control you can speed up the fan speed for heavier, more dense coffee, to make sure the beans are agitated enough to roast evenly. For green beans with less moisture content, a lower fan speed will keep the temperature high. The fan speed can be adjusted at any time during the cycle. We really like the ability to start a cycle with the fan set to high to dry out the beans. As the coffee loses water and becomes lighter during the roast cycle, turning the fan speed down will allow the roast chamber to retain more heat, speeding up the roasting time- a good feature to prevent over baking really dark roasts. The SR500 also has three temperature settings that can be adjusted any time during the roasting process:

High temp. = 490 degrees
Medium temp. = 455 degrees
Low temp. = 390 degrees

New: Organic Toasted Cacao Nibs

Certified organic and Fair Trade from Ecuador. Cacao nibs are the pure and raw form of chocolate with nothing added. The nibs are the flavorful inner part of the cacao bean that are cured after gathering and then carefully roasted to bring out the full chocolate flavor and aroma. Chocolate, cocoa and cocoa butter are made from cacao beans. They are great for brewing cocoa flavored beer, wine, mead, or liquors. Cacao nibs are also great to snack on! If you like dark, bittersweet chocolate, you might have to be careful because these can be addicting!

The nibs can also be coarsely ground and added to coffee or brewed like coffee on their own for an amazing chocolate drink. In brewing, they can be added directly to the boil, or added to the secondary fermentor and allowed to steep for 5 to 10 days. If used in the boil, some of the natural bitterness of the pure cacao will be extracted, and with a little R & D they can be used to replace some of the bittering hops in a recipe. The cacao flavor is naturally great in porters and stouts, but the possibilities are many.. try a cocoa Nut Brown or Celebration Ale, or perhaps a rustic red...

Cacao contains high levels of suffer and Magnesium plus many other trace minerals and compounds. Cacao is known to trigger feelings of love and happiness due to high levels of phenylethylamine, and to diminish appetite due to high levels of MAO inhibitors (monoamine oxidase enzyme inhibitors). Cacao has diuretic properties and has been used as an aid for high blood pressure because it helps improve circulation and dilation of blood vessels.

This chiller is designed to quickly cool up to 10 gallons of boiling hot wort. Made with 70' of 3/8" diameter coiled copper tubing, 16' of 3/8" plastic water hose, a brass hose fitting (can be attached to a garden hose or directly to a sink with a faucet adapter), and 3 hose clamps. Dimensions are 10" wide by 24" high. Cools 10 gallons of wort down to 75 oF in 30 to 50 minutes (depending on water temperature and wort circulation). New: Certified Organic Irish Moss!

Irish Moss (Chondrus crispus, also called Carrageen moss) is a seaweed commonly found in the North Atlantic. It is widely used in beer making as a clarifying agent. When Irish Moss is added during the boil it causes proteins to clump together, which makes them heavy enough to fall to the bottom of the kettle with the rest of the trub. Our organic Irish Moss is harvested from a protected area on the shores of Nova Scotia in Canada. Harvesters hand-rake the marine plants under closely controlled conditions to ensure purity, freshness and to safeguard the natural resource. The producer utilizes all natural processing methods to produce a clean, chemical free product.

Irish moss was once a prized ingredient in traditional herbal medicines. Aside from the average 80% natural pectin (unrefined carrageenan) content Irish Moss is rich in calcium, sulpher, bromine, potassium, magnesium, and sodium. It can be used as a natural pectin source for jams and jellies. When boiled in water it will completely dissappear, and then form a jelly when cold if the concentration is high enough. Because it is very easy to digest and its high nutrient content, Irish Moss can be used for digestive problems, diarrhea, as a laxative, and to treat ulcers. In the Carribean, Irish Moss is made into a thick drink flavored with spices such as ginger and cinnamon, which is widely believed to have aphrodesiac properties.

Ranco Digital Temperature Controller: $99

The Ranco digital temperature controller is a full featured, programmable thermostat that controls temperatures from -30 oF to 220 oF. Features a submersible remote sensor probe with an 8 foot cable and a liquid crystal display that shows the exact temperature at the probe. Features the ability to set the differential (the temperature range at which the cooling or heating unit starts and stops) from 1 to 30 oF. By setting the differential to a higher range, you can save energy and wear and tear on your refrigerator compressor. In addition to its use with a refrigerator or freezer, the digital controller can also control any electric heating device. The Beer Gun Bottle Filler: $69.90

The BeerGun from Blichmann Engineering is a revolutionary new bottle filler that eliminates the complication and time-consuming operation and cleaning of traditional counter pressure (CP) bottle fillers used to fill bottles from kegs. The Quiescent Flow Technology of the BeerGuneliminates the complication of CP fillers, while maintaining the primary function – purging a bottle with CO2 (no oxygen pick-up) and filling it with minimal foaming and carbonation loss.
Features intuitively obvious operation, easy sanitation procedures, and ability to fill any depth bottle without modification makes this filler a clear standout. Instead of pressurizing a bottle to keg pressure like CP fillers do to reduce foaming – with all its complicated valving and cumbersome operation this filler gradually reduces the beer from keg pressure to atmospheric pressure with little turbulence. The result is a consistent bottle fill with little foaming and no oxygen pick-up.
Foaming is caused predominantly by turbulence and sudden changes in pressure. The unique design of the BeerGun eliminates the need to pressurize the bottle by providing a non-throttling, quick-acting valve placed at the BOTTOM of the filler stem, and a beer delivery system that is very low in turbulence. All current designs use a valve at the TOP of the filler. Placing the valve at the bottom not only allows the valve to be quickly immersed in the beer, further reducing pressure change and turbulence, it keeps the stem full of beer at all times. Traditional fillers, or filling from a tap with a hose, forces the beer down an empty tube each time, kicking up foam along the way.
And since the beer is sealed in the filler stem when the BeerGunTM is removed from the bottle, it automatically provides a consistent bottle fill level when the stem is removed!
These features, coupled with a CO2 jacketing tube for bottle purging, and ergonomic valve actuators, means filling a bottle is faster, intuitively obvious, more accurate, and easier than ever before! And since a pressurizing stopper isn’t required, you can fill any depth bottle without buying different stem lengths or adding plastic hose extensions.

NEW! Aeropress Coffee Maker: $29.90

We have discovered a new way to make great tasting coffee fast, and we're hooked. The Aero Press was developed by Aerobie, a company local to our area that is well known for the ring shaped frisbees they also make. It is notable that the press is entirely manufactured here in the USA. Although similar in appearance to a French press, there are some key variations in the way coffee is brewed with the Aeropress that make the resulting coffee much different.

The Aeropress has two main parts, the outer chamber with the filter on the bottom, and the inner plunger with a thick rubber gasket which provides a snug, airtight seal. This forces air through the wet coffee grounds which results in a fast extraction time. Because the grounds need only a very short contact time with hot water less bitter compounds are released from the coffee. The result is a very smooth tasting cup of coffee with measurably lower acidity. The Areopress uses paper filters which eliminates the grit which is usually produced with a French press.

The high temperature polycarbonate and polypropelene plastics used to make the Aeropress are FDA approved for cooking at boiling temperatures. The filters are cheap, oxygen bleached, and compostable. A package of 350 filters and a zippered nylon carry sack are included in the purchase price. Additional filters sold separately.
