All Grain Organic Beer Kits
If you
are an all-grain brewer, our kits offer the convenience of pre-measured
ingredients, with clear instructions outlining the mashing and
brewing
procedures. If you have been thinking about taking the step to organic
all grain brewing, these kits are a good way to make the leap because
of the step by step instructions and proven recipes. Our all-grain
kits
are economical if you only need the ingredients for one batch, because
you do not have to purchase more bulk ingredients than you may
need.
The malts in our all grain kits are pre-crushed unless otherwise
requested. We crush the grains the day we ship your kit and seal
them in air tight
bags to prevent moisture absorbtion. If you wish your grains not
crushed, simply request it when you place your order over the phone
or in the
space provided on our order form. All of the organic ingredients
included in our kits are certified organic under the USDA National
Organic Program
by California Certified Organic Farmers.
Each kit description
includes information about original gravity and IBU's (International
Bittering Units), to give you more information about the strength
and bitterness of the beer produced by each kit. An original gravity
of 1.032 to 1.042 will produce a beer with a lower alcohol content,
a range of 1.043 to 1.054 will have a moderate alcohol content, and
an original gravity of 1.055 or higher will produce a strong beer.
Beers with a low hop bitterness will have an IBU of 30 or less, an
IBU of 30 to 40 will produce a moderate bitterness, and an IBU of
over 40 will produce a strong bitterness. Because the strength of
the beer affects the percieved bitterness of the finished brew, the
above values are intended as a guideline only.

Our
Kits are packaged in a box with a full color label. You may
find this is not necessary, and if so, you may order your kit
without it. Simply request the plain brown wrapper option when
ordering, or order the plain brown wrapper version if ordering
on-line, and we will ship your kit without the color label and
for $1 less.

YEAST
OPTIONS: Our kits do not include yeast because we offer
so many different options. Unless you plan to buy yeast locally, you
must order yeast for your kit. There are 2 choices of liquid yeast
for all of our kits. In addition to Wyeast, which comes in a foil
self starting pouch, we now offer White Labs liquid yeast, which comes
in a vial (for more details, see our yeast
section). You also have the option to choose a different yeast
style than the one suggested for the kit you order. If you prefer,
you may also purchase dehydrated yeast for your kit instead of liquid.
Dehydrated yeast is less expensive than liquid yeast, and stores longer,
but usually produces beer of slightly lower quality than liquid yeast.

Bridges Red Ale
Our
Red Ale is so good we have decided to give it our name! This West
coast style red
ale has a deep reddish amber hue, a full bodied, well balancedmalt
flavor, and a strong, aromatic hop character. Contains organic
malted barley,
organic hops, corn sugar, Irish Moss, recipe, and instructions. Produces
an original gravity of approximately 1.050. IBU's: 40. Recommended

PALE
ALE
Easy
to brew, and easy to enjoy, our Organic Pale Ale will satisfy your
thirst
for a good basic ale. Pale amber in color, with a full bodied maltiness
and rich hop character. Contains organic malted barley, organic
hops,
corn sugar, Irish Moss, recipe, and instructions. Produces an original
gravity of approximately 1.050. IBU's: 40. Recommended yeast for
this
kit (Not included! Order separately): Wyeast #1056 American Ale,
or White Labs California Ale. #OBK17D

E.S.B.
(Extra Special Bitter)
Smooth, malty, and
moderately hoppy, this is a classic E.S.B. that is a true showcase of
quality organic beer. The recipe is loosely based on our popular Red
Honey ESB recipe that we discontinued last year because we could not
source certified organic honey. This ale is light amber in color and
is sure to be a crowd pleaser. Our final test batch was so good that
5 gallons ran dry in less than a week! If you want more of a dry, crisp
finish we highly recommend adding 1 to 2 lbs of raw honey (not included
in the kit) to the boil. For a hoppier finish, try dry hopping with
organic Cascade hops (purchase separately). Contains organic malted
barley, organic barley flakes, organic hops, organic dry malt extract
(DME) for bottling, Irish Moss, recipe, and instructions. Produces an
original gravity of approximately 1.058. IBU's: 44. Recommended yeast
for this kit (Not included! Order separately): Wyeast #1098 British

BRITISH
BITTER
Like the
traditional English bitter, this is a light ale, and not too bitter.
Medium bodied, light amber in color, and a well balanced, light hop
character. Contains organic malted barley, organic hops, corn sugar,
Irish Moss, recipe, and instructions. Produces an original gravity of
approximately 1.045. IBU's: 32. Recommended yeast for this kit (Not
included! Order separately): Wyeast #1968 Special London Ale, or White
Labs Burton Ale.

90
Shilling Scottish Ale
Called 90
Shilling because of the old Scottish Brewery tradition of naming the
the ales according to the price commanded for a full cask. A strong,
full bodied ale with a deep copper red color and very mildly hopped.
For a truly unique brew, try brewing this with the Heather tips (sold
separately) which add a fresh grassy/floral aroma and a slight herbal
bitterness. Contains organic malted barley, organic hops, corn sugar,
Irish Moss, recipe, and instructions. Produces an original gravity of
approximately 1.068. IBU's: 25. Recommended yeast for this kit (Not
included! Order separately): Wyeast #1728 Scottish Ale, or White Labs
Edinburgh Ale.

Weissbier
Based on
the traditional German Weissbier, our Weissbier is a light wheat beer
with the delicate aroma of premium German organic hops. Produces a slightly
cloudy, full bodied ale with a complex flavor. Our all grain recipe
contains about 50% wheat malt. Contains organic malted barley, organic
malted wheat, organic hops, corn sugar, Irish Moss, recipe, and instructions.
Produces an original gravity of approximately 1.048. IBU's: 21. Recommended
yeast for this kit (Not included! Order separately): Wyeast #3068 Weihenstephan
wheat, or White Labs Hefewiezen. For a drier, slightly tart wheat beer,
use Wyeast #3333 German Wheat or White Labs #380 Hefeweizen IV.

INDIA
PALE ALE
Now with
more malt and more hops, our IPA kit has been improved to satisfy your
thirst for a strong, extra hoppy beer. Our kit features the distinct
hint of blackberry flavor from the New Zealand Pacific Gem hops and
a light toasted malt flavor. The NZ Hallertaur hops and English Kent
Goldings hops add a rich hop aroma. Like a the traditional IPA, this
beer has a strong hop bitterness. Contains organic malted barley, organic
hops, corn sugar, Irish Moss, recipe, and instructions. Produces an
original gravity of approximately 1.060. IBU's: 54. Recommended yeast
for this kit (Not included! Order separately): Wyeast #1968 Special

NUT
BROWN ALE
This is a
smooth, nutty ale, warm chocolate in color, with a medium body and a
malty sweetness balanced with the woodsy spiciness of fresh Target hops.
This recipe has won several awards in home brew contests, as brewed
by our members. Contains organic malted barley, organic hops, corn sugar,
Irish Moss, recipe, and instructions. Produces an original gravity of
approximately 1.046. IBU's: 25 Recommended yeast for this kit (Not included!

ROBUST
PORTER
A
warm and robust full bodied Porter that takes full advantage
of the aromatic
N.Z. Hallertaur hops. For a pleasant and surprising finish, try bottling
this ale with one cup of honey instead of the bottling sugar
for a great honey porter. Contains organic malted barley, organic
hops,
corn
sugar,
Irish
Moss,
recipe,
and instructions. Produces an original gravity of approximately 1.056.

IRISH
STOUT
For the many
stout lovers out there who have requested it! This is a dry stout styled
after the most popular Irish Stout, with a rich roasted malt character
and moderate hop bitterness. Has a very thick, full bodied texture and
a thick, creamy head. Contains organic malted barley, organic roasted
barley, organic barley flakes, organic hops, corn sugar, Irish Moss,
recipe, and instructions. Produces an original gravity of approximately
1.046. IBU's: 38. Recommended yeast for this kit (Not included! Order
separately): Wyeast #1084 Irish Ale, or White Labs Irish Ale.

OATMEAL
STOUT
Our
Oatmeal Stout is a favorite (We can never keep it around for
very long) and
the recipe (as brewed by our Members) has already won several awards
in home brewing contests. Contains organic malted barley, organic
roasted
barley, organic flaked grains (oats, barley, & wheat), organic
hops, corn sugar, Irish Moss, recipe, and instructions. Produces
an original
gravity of approximately 1.068. IBU's: 47. Recommended yeast for
this kit (Not included! Order separately): Wyeast #1084 Irish Ale,
or White
Labs Irish Ale.

CELEBRATION
ALE
A
full bodied, deep amber ale spiced just right for the holidays.
A blend of Ceylon
cinnimon sticks, whole cloves, and organic ginger give this beer
a warm, spicy finish. Because the spices are packaged separately,
you also have
the option to omit the spices (and save them for the pumpkin pie),
or adjust the amounts used to your own personal preference. Contains
organic
malted barley, organic hops, organic spices (Ceylon cinnimon, cloves, & ginger),
corn sugar, Irish Moss, recipe, and instructions. Produces an original

GRAIN HERITAGE ALE
This brew has
been a personal favorite of Co-op Member Amelia for many years. Amber
in color with a nutty complexity from the toasted buckwheat, millet,
and quinoa. Wheat and oats give the ale a full bodied flavor, with
barley and rye for a clean finish. The hops are mellow to allow the
unique grain flavors to come through. It's not just for breakfast
any more! This kit is more difficult to brew than our other All Grain
kits because it requires pre-cooking the specialty adjuncts. Contains
organic malted barley, organic malted wheat, organic flaked grains
(oats, & rye), organic whole grains (quinoa, buckwheat, &
millet) organic hops, corn sugar, Irish Moss, recipe, and instructions.
Produces an original gravity of approximately 1.050. IBU's: 40. Recommended

GERMAN
ALT
A classic German
ale, with just a bit of wheat for a full bodied taste. A smooth, malty,
rich brew balanced with a fine German hop aroma. Sure to be a crowd
pleaser! Contains organic malted barley, organic malted wheat, organic
hops, corn sugar, Irish Moss, recipe, and instructions. Produces an
original gravity of approximately 1.050. IBU's: 40. Recommended yeast
for this kit (Not included! Order separately): Wyeast #1007 German
Ale/Alt, or White Labs German Ale/Kolsch.

BELGIAN
DUBBEL
If you are a
fan of Belgian syle beers, our Belgian Dubbel kit will be a new favorite.
This is a strong, malty ale with a rich, complex flavor and a hint
of nuttiness. Medium amber color and mildly hopped.Contains organic
barley malt, organic cane sugar, organic hops, corn sugar, Irish Moss,
recipe, and instructions. Produces an original gravity of approximately
1.066. IBU's: 28. Recommended yeast for this kit (Not included! Order
separately): Wyeast #1214 Belgian Abbey or #3787 Belgian Trappist,
White Labs #500 Trappist, #530 Abbey, or #550 Belgian Ale. Choose
the yeast that best suits your fermentation temperature range and

OKTOBERFEST
This
is a light amber, malty beer with a crisp hop finish. The toasted
malt and
organic German premium hops gives this brew a wonderful blend of
flavors in the Vienna/Märzen/Oktoberfest tradition. Best
if fermented at lagering temperatures (45- 55 oF). Contains organic
malted barley, organic
hops, corn sugar, Irish Moss, recipe, and illustrated instructions.
Produces an original gravity of approximately 1.050. IBU's: 23.
Recommended

Bavarian Lager, or White Labs German Lager. If you are not able
to ferment at

PILSNER
This recipe
has taken 1st place in a local AHA sponsored home brewing contest! Our
pilsner is full bodied in the Czechoslovakian style, with a pronounced
hop bitterness and crisp flavor. For the best results this beer should
be fermented at lagering temperatures (45- 55 oF). Contains organic
malted barley, organic hops, corn sugar, Irish Moss, recipe, and instructions.
Produces an original gravity of approximately 1.050. IBU's: 36. Recommended
yeast for this kit (Not included! Order separately): Wyeast #2007 Pilsen
Lager, or White Labs Pilsner Lager. If you are not able to ferment at
lagering temperatures, try using Wyeast #2112 California Lager or White

SANTA
CRUZ DARK LAGER
Our heartiest
lager, similar to the traditional style of a German Schwarzbier, is
dark and smooth. Has a roasted malt flavor with a medium body and a
subtle, mildly spicy hop flavor. Contains organic malted barley, organic
hops, corn sugar, Irish Moss, recipe, and instructions. Produces an
original gravity of approximately 1.048. IBU's: 23. Recommended yeast
for this kit (Not included! Order separately): Wyeast #2206 Bavarian
Lager, or White Labs German Lager. If you are not able to ferment at

CALIFORNIA
LAGER
Here is a
kit for the beer style native to our part of the world! In the California
steam beer style, this is a full bodied amber lager with a hint of caramel
and a strong hop character. Our easiest lager to brew because this style
can be fermented at ale temperatures (60 to 65 oF). Contains organic
malted barley, organic hops, corn sugar, Irish Moss, recipe, and instructions.

PRE-PROHIBITION
LAGER
Perfect for
summer barbeques and events, this is a light lager with a rich hop flavor
and a clean, crisp finish. Unlike modern American lagers, our pre-prohibition
style has a creamy, smooth texture and a prominent hop flavor. Contains
organic barley malt, organic rice syrup, organic hops, corn sugar, Irish
Moss, gypsum, recipe, and instructions. Produces an original gravity
of approximately 1.046. IBU's: 30. Recommended yeast for this kit (Not
included! Order separately): Dry Vierka Lager yeast, Wyeast #2035 Pilsen
Lager, or White Labs American Pilsner Lager. If you are not able to
ferment at lagering temperatures, try using Wyeast #2112 California
